Mild Cod & Sweet Potato Curry with Brown Rice

We make this mildly spiced yellow curry with juicy cod and chunks of sweet potato. Serving on brown rice makes it a fibre-packed dish too. Courgette and peas add lots of vitamins and minerals including Vitamin C and folate.
Foodie Fact: Cod is an excellent source of vitamin B12 (supports the central nervous system), selenium (supports a healthy immune system) and phosphorus (essential for bone health). While we usually opt for cod in this recipe, we will sometimes swap to equally tasty pollock if there are concerns about cod stocks. We do this as we believe in ethical, sustainable eating. Pollock is also a rich source of these vitamins and minerals. We will always let you know if this swap is being made.
