Tomato & Lentil Tabbouleh


This tomato & lentil tabbouleh is a great gluten free alternative to the original Lebanese cuisine. Packed with protein and flavour, the use of raw garlic also means its full of gut friendly prebiotics. Here at Wild Child HQ we love it served with fresh fish and roasted greens!

Tomato & Lentil Tabbouleh

(serves 4 little foodies a a side)

250g of pre cooked puy lentils

Two handfuls of cherry tomatoes, halved

Half a small red onion, finely diced

1 small garlic clove, crushed

Juice of 1 lemon

Handful of fresh coriander and mint

First chop your coriander and mint till very fine

Place all your ingredients in a salad bowl

Squeeze your lemon juice over the lentil mix and add a generous slug of olive oil

Mix everything together and serve chilled
