These cookies are the perfect 4pm sweet treat in December! Rammed with festive flavours like nutmeg and cinnamon, the oat based cookie is a great way to introduce children to slightly stronger flavours.
Makes 24 mini cookies
75g ground oats
20g gluten free flour
Juice of 1/2 a small orange
50g chopped dried cranberries
2tbsp maple syrup
2tbsp melted coconut oil
1/2 tsp vanilla extract
1tsp ground nutmeg
Pre heat oven to 180 degrees and line a baking tray with greaseproof paper.
Mix all your ingredients in a large bowl till a dough forms. Now using a rolling pin, roll your dough out on a floured surface till about a coins thickness level.
Use a cutter to get desired shape and place on baking tray. Keep doing the above step and cutting until all your dough is gone.
Bake for 15 minutes till slightly brown and cooked through.
Grate some more orange over the cookies, scatter some cranberries and serve warm.
